You might’ve heard the terms “raw honey,” “unpasteurised,” and “pasteurised” thrown around when it comes to honey, but what’s the real difference? Let’s dive into the hive and explore why raw honey is our go-to, and how each type brings something a little different to the table. 

What Makes Raw Honey So Special? 

Raw honey is pure and simple—just the way the bees made it! It’s honey in its most natural form, straight from the hive, with no heat, no filtering, and no tampering. This means all those wonderful things like bee pollen, propolis, and enzymes stay intact. And yes, it might have a little wax or pollen floating around, but that’s a sure sign you’re getting the real deal. 

Why We’re Obsessed with Raw Honey: 

  • Packed with Goodness: Bee pollen, antioxidants, enzymes—you name it. Raw honey has it all! 
  • A Taste of WA: Our bees collect nectar from wildflowers all over Western Australia, including the Julimar Forest, Jarrahdale, and Toodyay, so every jar is packed with the unique flavours of our local landscapes. 
  • Natural Crystals? No Problem! It’s important to note that crystallisation occurs because of the sugar content in honey, particularly the ratio of glucose to fructose. This is a completely natural process and doesn’t mean the honey is going bad. In fact, it’s a sign that the honey is raw and unprocessed, keeping all those beneficial nutrients intact. If your honey crystallizes, just pop the jar in some warm water, and it’ll turn back to that golden liquid!

Unpasteurised Honey 

Unpasteurised honey has only been lightly processed, maybe filtered a little or gently heated, but it still keeps most of the good stuff like enzymes and pollen. It’s got that rich flavour we love but might lose a bit of its raw edge. 

The main features: 

  • Still Full of Benefits: Even with minimal processing, unpasteurised honey holds onto most of its natural goodness. 
  • A Little Smoother: You get a clean, delicious honey that’s a step closer to raw, but without some of the crystals and extra bits. 

Pasteurised Honey 

Pasteurised honey is heated up to make it smoother and extend its shelf life. It stays liquid for longer and is perfect if you prefer your honey crystal-clear, but some of those natural enzymes and health benefits are lost along the way. 

The main features: 

  • Smooth, Clear, and Long-Lasting: Pasteurisation keeps the honey liquid for longer and gives it that clean look. 
  • But… Less of the Good Stuff: Heat can reduce some of the nutrients and enzymes you’d find in raw or unpasteurised honey.
