Here in Western Australia, we’re fortunate to have an incredible array of native plants that yield some of the finest organic honey around. Let’s explore the rich variety of honey you can discover throughout the year and see how the changing seasons and our local flora come together to craft these exquisite flavours. 

Spring (September to November): A Flourishing Time 

Spring is the heart of honey production in Western Australia. As the weather warms and the land comes alive with colour, bees are busy collecting nectar from a plethora of blooming plants. One of the most significant contributors during this season is the Marri (Corymbia calophylla). Marri trees, known for their striking red and white flowers, provide abundant nectar that results in sweet, floral honey. The mild temperatures and occasional spring rains create ideal conditions for both plant growth and nectar production, making it a peak period for honey yields. 

In addition to Marri, the Jarrah (Eucalyptus marginata) trees also start their flowering cycle, providing a rich, dark honey known for its high antibacterial properties and caramel taste. This honey is highly valued for its medicinal qualities, often compared to Manuka honey and it also tastes pretty great too!

Summer (December to February): A Challenging Yet Rewarding Season 

Summer can be a mixed bag for honey production. The season often continues with favourable honey flows if the weather remains moderate and there are sufficient floral resources. However, the intense heat and dry conditions typical of this period can pose challenges. While some bees may struggle with reduced nectar availability, others can still make the most of the remaining blooms. 

The Bottlebrush (Callistemon species), which blooms in summer, provides a lighter honey with a distinct flavour. This honey is less common but highly sought after for its unique taste profile. As summer progresses, the Wandoo (Eucalyptus wandoo) trees, known for their rich nectar, create a lovely seasonal honey that also contributes to production, adding to the diversity of flavours. 

Autumn (March to May): Preparing for Winter 

Autumn is a time of transition and preparation. As the weather cools, honey production can still be productive depending on the availability of floral resources. The Powderbark (Eucalyptus accedens) trees start to bloom, offering another unique honey variety. This honey, though less prominent than Jarrah or Marri, contributes to the rich tapestry of Western Australian honey with its distinctive taste. 

During autumn, bees continue to gather nectar from the remaining flowers and prepare their hives for the cooler months. This period is crucial for ensuring that colonies are strong and well-fed before winter arrives.
